The thyme (thymus holosericeus), an integral part of the island’s flora, is a well known, valuable herb for its medicinal and culinary properties. Mediterranean countries are rich in thyme, and you will find plenty of that on the island as well. It grows mostly on Ainos mountain’s slopes, on rocky and sunny places. You can see it blooming from May to autumn, and it is collected in June or early autumn. Its taste is quite bitter, but has a great beneficial effect and a distinct aroma, especially when dried.

In Kefalonia, thyme is very often used in cooking and apiculture, in body care products as well as a hot drink. Add some thyme to your fresh vegetables’ salad, to flavour your meat, soups and beans, and you will instantly see the difference.
A special mention should be made to the thyme honey, one of the most famous types of honey, which has an intense herbal aroma and a sweet taste. Due to Kefalonia’s biodiversity, honey has an exceptional taste. Other types of honey are Pine honey (meli elatoy) and Flowers honey (anthomelo).
